Favourite eating fish ??

Hi guys , what kind of fish do you consider the best eating fish out there ? And briefly how do you cook them ? Im mainly talking common species available to Sydney waterways.

as i dont eat fish ill say what my parents and pop like:
mum: flathead fillets batered in beer batter
dad: same as mum
pop: leatherjacket anyway my nan serves it up
